Fun reading them bike blogs ( I do like a mountain bike ride after all). I read a couple apart from Colin Griffiths. One is Tea and Cake by Kate. She cycles and rides over mountains and hills. Why run over a hill? I like to have time to enjoy a view. Respect to them. The blog you have pointed out is going on my reader list.
I've used a bike for years and done some touring on a bike but backpacking is my number one outdoor pursuit. Like you I prefer to amble at my own pace and enjoy the view. I've added this to my reader too. I could be mistaken but Teri might be a guest blogger on the site...
